Cheese Pie

Romanians took the Greeks’ recipe and adapted varying the filling. They spread this idea all around Europe and soon the cheese pie became a very famo

Lavas Cheese pies are easy to make and utterly delicious.

Serves: 4 people

Ingredients:

1. 1 cup of cottage cheese

2. 1 Armenian lavas foil

3. 1 egg

4. 1tbsp of salt

5. 1/3 or 1/4 cup of sunflower oil (depends)

6. a bundle of parsley & a bundle of dill(optional)

Ustensils:

1. a bowl 2. 2 square oven pans 3. 1 large spoon 4. aluminum foil

How to do it:

1. First preheat the oven to 180˚-200˚ C (356˚-392˚ F) and pour some sunflower oil onto the pan and spread it out. Lay the lavas foil on a clean surface and pour the rest of the sunflower oil on it and spread it out using a cooking brush.

The filling:

2. Put the entire cottage cheese in the bowl and wash the egg then crack it on top of it. Then add the salt and mix it with the large spoon until it becomes uniform. You can taste and check for salt and add some more. If you want you can add parsley and dill which you cut into small pieces. Then mix the filling.

3. Pour the filling on the lavas foil and spread it out. Then roll it and put in the oven. Cover the pan with another pan or aluminum foil. Bake for about 30 to 45 minutes. If you’re using aluminum foil take it off the pan about halfway through.

4. When the time’s up take it out and take off covering the pan if you used one to cover it. Let it cool of a bit and cut it with a knife. Bon appétit.J

Classic Cheese Pie

(But with Potato and Bacon)

Serves: 4 people Preparation: 20 minutes

Everyone loves classic cheese pie and you will are too. But, with more flavor it is with bacon. It is more classic than ever.

Ingredients:

· 1 medium potato

· 1 tbsp of vegetable oil

· 1 small onion; thinly sliced

· 2 x 380g (12oz) packs of ready rolled puff pastry

· 1 egg lightly beaten until to a glaze

· 4 rashers of streaky bacon cut into 2cm (3/4 in) strips

· 100g (3 ½ oz) mature

· Cheddar, grated

· 2-3 tbsp of single cream

Methods:

1. Preheat the oven at 200°Celsius (gas mark 6). Peel the potato and boil till it is tender. Then drain the water for cooling in 2 minutes and slice the potato into smaller pieces. Heat the oil in a large frying pan and cook the sliced onion for 6-7 minutes, or until it is soft.

2. Lay the dough on a greased baking tray and brush it lightly with the beaten egg. Spread the cooked onions evenly over the pastry circles, leaving a 1cm (¾in) border all the way around. Top with a few potato slices, bacon and finally the grated Cheddar cheese. Season with a little salt and pepper for taste. Drizzle over the cream.

2. Place the pastry over the assembled filling and press the edges of the pastry until it circles together. Cut a small cross in the middle of the pie. Bake in the oven for 10-15 minutes, till it is golden and risen.J

Tips:

“If you are a vegetarian just simply omit the bacon.”
